What's for supper?

Yesterday turned into fajitas at 9:00. Things happen.
Mini meat loaves off the grill, mashed potatoes, mushroom/onion gravy, rabbit food.
Tell me about these grilled mini meatloaves. I assume you make a meatloaf mix then make patties (or do you make tiny loaves?) and grill them as though they were burgers? That's an interesting idea. I've baked mini meatloaves in muffin pans for church potlucks, but never thought of grilling them.

I use pork rough ground like chilli meat, ground beef, sautéed onions/jalapenos, coarse bread crumbs, beaten egg, paprika, salt, garlic. Let it rest in the fridge for at least an hour. Form oblong about 3/4 pound loaves, wrap a slice of stretched bacon around each one. Medium heat on preheated grill. Better the next day as meat loaf sandwich with horseradish and pickles.

I've made meatballs and other dishes by grinding beef, veal and pork with my stand mixer attachment. It makes such a big difference.

I run a whole pork loin through then cook some with onion, herbs, heat for sausage crumbles which get frozen in cup sized canning jars with screw top lids. Perfect for SO’s breakfast. The rest gets frozen in roughly 3/4 pound packages. Meatballs, pot stickers, … .

I started doing it out of necessity. Ground veal is not always easy to find. Ground beef, pork and veal get weighed out in 1/4# and 1/3# patties, then vacuum sealed and frozen.
 
Today is another nice day, so I want to get more yard work done before we get to the heat of summer. I made penne pasta in the Ninja Foodi, and when it was almost done, I added lots of veggies, black beans, TVP, and tomato sauce; so that will be the food for anytime today that we are hungry, and there is probably going to be leftovers to store for another meal.
Watermelon will be for later on this afternoon if I am as worn out as yesterday, and I know I won’t want to even think about cooking later, so glad that is all done for today.
 
I had a change of plans. I stopped by the local seafood place and bought 1/2# of scallops. I'm gonna grill them, serve over some spicy corn chowder with a side of steamed asparagus, salad on the side, and a Dreamsicle, The chicken will wait until tomorrow.

They had all their frozen fish marked down to clear out the freezer, so I bough a piece of Mahi Mahi for some future meal. When they first opened pre-COVID, these guys bought whole fresh fish, cut it up in the store, and put it on ice to sell fresh. It was always very good. At some point they started buying vacuum-packed tuna and freezing it. Now they still cut other fish on premises but they freeze a lot of it while only selling some fresh. Disappointing, but I guess it's still better than the grocery store stuff...and they're just up the road from me.
