What's for supper?

Thanks. We had a quiet 4th but I'm not complaining. (Well, I always have something to complain about but in this case not Independence Day!!) I hope you had a nice one, too. Maybe you can break that hot dog record next time. :D
That's great y'all had a nice quiet 4th, I did too, and when it comes to complaining, the onliest one who could outdo me was George Carlin lol! I will definitely give it another go next year on my hot dog record, thanx! I think I did too much snacking while the dogs were on the grill, that might have kept me from eating at least 7 :(

Tonight’s will be pork stuffed hot banana peppers wrapped in bacon, cheese quesadilla wedges, pickled jalapeños, tomatoes/cucumbers and Thai Pepper salsa.
Last night: hard Italian salame, apple slices, Pepper Jack and Swiss, Mustard pickles, fresh bread.
Mustard pickles of Armenian Cucumbers are a candy substitute for me. A three cup flour bread dough with various flours, fillings, toppings makes for small oblong loaves which are perfect for slicing, take a few minutes to defrost and smell like fresh bread.

Gotcha'👍 I have never heard that term for snacks before. I thought it had something to do with the cartoon dog Scooby-Doo and what he ate, or perhaps snacks named after him. 🤷‍♀️
 
I'm thinking about taking an enchilada recipe and altering it with Stroganoff sauce to make "Strogoladas."

Proably filled with sauce, ground beef, mushrooms, peppers, onions, and shredded white cheddar. Wrap that in flour tortillas, place them into a baking pan on top of more sauce, then over that sauce, cheese, and some fine-chopped peppers and onions. Bake 1st with topping under foil, then remove the foil, add the topping, and finish baking.

If you like asparagus you might use that on there. I suppose other stuff could be left out and even green beans or something might go inside. Roast beef chopped up might work as well. I'm not sure about chicken or turkey though.

Just an idea, I haven't tried it yet. Does this sound good or not?

It may turn out well. For me there is too much going on.
 
I grilled hot dogs for lunch. I bought some not-cheap all-beef, not-cured ones at ALDI, They were pretty good. So dinner's gonna be a salad with cheese & crackers. And a Dreamsicle.
When I was in Aldi yesterday I bought a couple of their heat-and-eat entrees to try. Some beef udon noodle thing and a couple of Asian teriyaki chicken. I'm having a "I'm tired of cooking" spell and I don't want takeout or sandwiches every day, so we'll see how these are.

I also snagged a bagged Caesar salad and 2 black angus ribeyes that I cooked today. Those were the best steaks we have had in a while...very tender and juicy. I haven't bought much meat from Aldi in the past but I will buy those steaks again.

ALDI carries a vacuum 2 pak of bacon wrapped fillets. They have always been a little on the tough side regardless of whether I do them in a cast iron pan or the grill. I did one sous vide then finished it on the grill. It came out very tender. I rarely buy meats (or frozen foods) at ALDI, but that's mostly because it's a 40 minute drive home and I usually grab lunch after shopping while I'm in the big city. I never think to take ice paks. Maybe I'll try the ribeyes. Regardless of where I buy ribeye, it seems to come out better than any other cut.
