i wanted to like lamb, but I don't.
@Ken Anderson lamb needs salt and pepper and if you were cooking say a leg of lamb ,it needs rosemary and onions cooked in the roasting pan ( with a lid ) ( you can cook chops or any cuts the same way )
I buy a little plastic container of roast lamb seasoning , many I know use fresh lemon juice and wipe the meat with a freshly picked rosemary sprig
Lamb is sorta bland meat , it needs a lift ….added herbs or spices

Don't forget the garlic. And as you said, fresh sprigs of rosemary.
 
I thought this was interesting. Keep in mind this chart has nothing to do with the volume of meat that is eaten in various countries, it's just the relative amount of each meat that is eaten.

Considering India’s religions and Ethiopia’s population size - not overly relevant, is it?
Regarding India, it makes sense that Hindus would not be eating much beef. Regarding Ethiopia, the chart is showing the relative amounts of each meat consumed within each nation, not comparing quantities between nations. The other factor is available resources and environments. Poultry can be grown cheaper and in a broader range of conditions than beef. So a big part of this might be cost & availability of each meat type rather than preference.

Also regarding Ethiopia...I've eaten at Ethiopian restaurants. Despite its impoverished reputation, they have some fine cuisine.

Yes, there are some enclaves in the US.
 
My preferences vary greatly. I only like the better cuts of beef as they can be cooked to just over rare. The only liver I'll eat is calves liver or chopped chicken liver sandwiches. I love most seafood except shrimp. I have an allergy to shrimp. I love most fish from the Northern oceans and lakes. I love loin lamb chops.

If beef is in a tasty stew or prepared culturally, I find it tasty. I do not like pork at all.

When I was a kid, it seemed that calves liver was all you could get. Now it's labeled "beef liver," but I don't know if it's really adult beef liver or if it's calves liver that's not labeled as such so as to not offend people.
