Good morning to all-
Yep, I remember when brisket was often either tossed away or just pitched into the ground beef bin. Oxtail? that was sold for nothing to feed dogs. When we raised our beef and took it in for processing, we got to outline in great detail just how we wanted the meat cut and how big the packages were to be. it was great meat, it was.
chicken wings were- as the previous post mentioned- used as crab bait.
We don't buy any beef from markets. Instead we drive up the freeway for 20 miles to the local Creek Indian Reservation processing plant where we can find great uncommon cuts of beef and also very good prices for ground beef. And this beef tastes GOOD= because it comes off the grass and not the horrible, nasty feedlots out west.
Good meat can be found in some places, but it is getting harder and harder to find.
