i wanted to like lamb, but I don't.

@Ken Anderson lamb needs salt and pepper and if you were cooking say a leg of lamb ,it needs rosemary and onions cooked in the roasting pan ( with a lid ) ( you can cook chops or any cuts the same way )
I buy a little plastic container of roast lamb seasoning , many I know use fresh lemon juice and wipe the meat with a freshly picked rosemary sprig
Lamb is sorta bland meat , it needs a lift ….added herbs or spices

We had horse butchers and specialty sales places. Very lean meat.

The French eat horse meat, unless that's changed in the past 10-15 years.

Don't forget the garlic. And as you said, fresh sprigs of rosemary.

My wife eats lamb, so she sometimes prepares it, though I will eat something else instead.
