What's for supper?

It's overcast and rainy, so I'm making soup again. I have white beans cooking to make Italian Beans and Greens soup which is one of my husband's favorites. I have some crusty baguettes in the freezer so I'll heat one of those, too.
Man, I'm gonna have to make a batch of Minestrone Soup. I have a great Chef John recipe...it's made with pancetta, and is the only time I use Ditalini pasta. (My mother just used spaghetti or shells broken into bits in her minestrone.)

It is too hot here again today for hot meals, but I need to make more ice cream mix, which is what we have had a lot this summer. It is like having a protein drink, but frozen and then turned into ice cream by the Ninja Creami.
So, today, I made a macaroni salad, which I make with lots of vegetables, dark red kidney beans, and some shredded cheddar cheese. It is filling, cold, and just hit the spot for dinner today.

Then we had fresh honeydew melon this evening, and that was a perfect snack meal.

I made a freezer batch of meatballs yesterday. A plate of them topped with cheese cubes and pickled jalapeños tasty Scooby snacks on the patio.

How does quiche sound with lots of mushrooms and ham and a bowl of rabbit food?
