Leftovers from Sunday... Cajun Red Beans & Rice with sausage, cornbread muffins, cole slaw.

I was thinking of turning leftover tomato meat sauce into chili. Corn muffins might be fun too.

I'm no chef & I hate cooking so today it was that Salmon in a can. Adding mayo & lemon juice takes away that Cat Food smell.

My husband won't be home for dinner so I'll probably warm up a bowl of leftover red beans and make cole slaw. That will be an easy dinner for me.

We went out for lunch/dinner at the local small Chinese cafe just down the road today. We have not been there for 4-5 months, at least. That is our main meal for the day, and if we get hungry later, we will have fruit or a snack of some kind.

Yesterday turned into a large plate of Scooby snacks - Gouda, Italian salami, sliced apple, various pickles and pizza crust thin garlic/parmesan flat bread. It was a beautiful evening on the patio and in the lower 90s.
SO has the option of Parmesan chicken or chicken fried chicken.
