I went to a local Mexican restaurant for lunch today ($12 fills you up), so will probably do the fruit & cheese thing again for supper.
That sounds good, Earl. Is it cold weather where you are? Sounds like you could add some broth and have soup!That's what I do, I've been using a one pot cast iron cooking pot. Boil 1/4 cup of lentils with chopped squash add a little bit of pre-cooked chicken breast, a tomato and cheddar cheese, some rosemary and seasoned salt and I am satisfied.
Good idea to add broth. Not very cold here, but anything under 60° feels cold for me, being a California native, but that's not cold considering what I see in other places like in Minnesota, I would not survive there.That sounds good, Earl. I'm thinking of making a meatloaf again as we always enjoy it for a few days...
This time I will add a box of stove top stuffing mix to the minced along with the herbs and spices I usually add..
Some diced onion, 1/2 cup of ketchup, 1/2 cup of stock, should make it better......
Too fancy for me, although it sounds good.I have a recipe for stuffed peppers that uses cumin and tumeric rather than Italian spices, and has walnuts, golden raisins and a serrano pepper in it. It's on the short list of things to make soon.
