Think the thing is to be clean …..in handling / processing / and ensure foods are throughly “ cooked “ and sealed
Ball mason always say …never store jars of preserved foods ….with rings on ~ they can go off I’d not properly sealed ..I always test my jars 24 hours after processing ….and remove the rings …
