Canning & Preserving Food

Think the thing is to be clean …..in handling / processing / and ensure foods are throughly “ cooked “ and sealed

Ball mason always say …never store jars of preserved foods ….with rings on ~ they can go off I’d not properly sealed ..I always test my jars 24 hours after processing ….and remove the rings …
 
For anyone interested in the science of canning, I highly recommend this woman's youtube channel. She is very knowledgeable and thorough. I learned a lot from this (28 minute) video.


Note that the Instant Pot she reviewed is now unavailable but has been replaced by a newer model. Now I am very interested in the Instant Pot, though it is smaller.

Beth about 20 years ago we bought the All American 930 Canner and it really made canning easier. We use our tailgate cooker on the porch to can. It has always worked great for us.
You can see a picture of it on the tailgate cooker.
Lid fits great without rubber's , comes complete no attachments to deal with. the lid locks down with hand tight wing nuts.

We have gas burners inside and heavy cast iron grid over them. We also have a cast aluminum (aluminium to @Kate Ellery ) canner that we bought 50 years ago on the advice of a scientist friend with experience in these things. He said the pressed canners didn't last as long. I can't say anything about the pressed ones, but our cast job has been going strong all those years with heavy use. It was also the cause of our first marital squabble:)


We like our cast aluminum too.never had any problem with it.
 
I watched a lady on YouTube for a long time , who used to be part of a huge religious group ????sect .?now involved in a church group ,
Anyway she preps and cans most of her foods ….outside on a huge gas burner

We use a gas burner in the shed as we can adjust it / far easier on the gas to control any temp drops after you’ve got it up the pressure
only issue we’ve had is with Weck jars don’t do to well for us ….they say they can be pressure canned but they blow the tops

So far we use Ball Lids. Never had a problem.
 
We ordered some organic black beans to can online. I've never seen such tiny black beans.
Now I'm afraid to use the things.
We have other beans we can use.
 
My most favourite is the pint size wide mouth …they fit in the fridge better ….( when we open a jar of fruit )

My biggest issue is getting lids , I bought Amish lids last year and they were a disaster , ..they have blue rubber on the sealing part and it melted while canning and dripped into the fruit ☹️☹️☹️☹️☹️never again ….

We won’t be canning any fruit this season ….its been way to cool here , allot of apricots have fallen off the tree and the issues I’ve had with the peach and plum trees
It’s been so cool in South Aust ….cherries that are grown in the Adelaide hills are still not ripe enough to pick …so no cherries in the shops

We can’t get ball,Mason jars or lids in Australia , we have what they call Aussie Mason ..made in China …they can keep them
as far as I’m concerned …
 
I have a gas stove in my kitchen with the heavy iron grates so I don't expect to be having any issues with that. I know a lot of people use camp stoves outdoors for canning, though.
We don’t have any gas lines where I live , if anyone wants gas stoves or hot water systems they have to have bottled gas

Those All Americans are the Cadillac of canners, Marie. I don't want anything big; I'm too old to be trying to handle one of those! 😀 Plus, I don't have a lot of stuff to can anymore. I'm planning to try dry beans, probably in pint jars.

No not really ….when I need more I may have to try the cheap mostly nasty 🤮 lids but they buckle in the canner , last year I ended up buying the Italian screw on lids from a distributor in the city …..they seal so well, it’s hard to get the lids off when we want to open them

I watched many of her videos , she’s one clever lady …and has degrees in what she saying so it makes good sense to me ..she always good with her presentations ….. she gives far more info about the large pot than the other lady with the cookbook as well,
who gave good wrap up on the larger pot ( electric ) one ….about the fact you have to use the sterilising which you can’t skip …

Think I’ve heard this lady referred to as Red ..for oblivious reasons seems in favour of the pots like mine and the one you’ve purchased …think I’ll stick like glue to what I’ve got …

We use the Superb lids and prefer them to the Kerr and Ball. We have never had any issues with the blue at all and the lids themselves are much heavier, so when they seal there is a very loud click. I can't understand the difference in our experiences. I wonder if the lids made for export are different that what we get here. Allegedly, the Superb lid production was begun because the existing lids did not meet the needs of the Amish, who probably can and preserve more than both of us together.
