These rascals freeze well if you slice them, freeze them spread out on a tray covered with wax paper and transfer them quickly into bags. You have to grab them at the last minute to cook them. I went through a period where I froze stuff like parsley, cilantro, etc. because it seemed I never had it when I needed it, but it never turned out well and I didn't need it as often as I thought I might. If I have leftover not-so-great steak, I slice it thin and combine with sauteed peppers and onions to make quesadillas (mushrooms optional). Place on a flour tortilla and add shredded white cheese; heat on a hot griddle.

I've been debating what spices to use in the pepper/shroom/steak. Suggestions?
I cooked both last night since I was making a mess, and planned to reheat the meat (which I already seasoned with Kosher salt & pepper from my high-dollar Pepper Cannon.) I'm gonna saute the onion, green pepper (no red available) and shrooms, then toss in the cut up meat to heat it through. I got half a baked potato left for the side. I make my own spice blends so I'll take a look and see what I got...either Mexican, Greek or Cajun. Are you pan grilling the whole steak and sauteing the onions and peppers? I'd probably hit it with fresh black pepper and maybe some garlic salt. Any spices you like would probably be good, but I'm usually a minimalist with steak.
