The chicken I got out of the freezer wasn’t breast fillet …it was chicken mince, that id bought in Aldi and had used half to make something I seen online….
a while ago …..so it turned out to be chicken rissoles with added grated carrot ..I still coated them in the egg x panko crumbs and cooked in air fryer ….they were very nice and moist ….i might make them more in winter months with a mushroom sauce with a spoon of added cream

"Manwich Goulash."

Light on the macaroni, heavy on ground beef, tomatoes, green peppers, and onions. Half a can of Manwich sauce for a little sweet and tangy flavor. I love a Sloppy Joe, but I've cut way back on breads.

Kroger is just a regular grocery store chain here, @Kate Ellery . There are actually several other grocery stores owned by the same company, making it one of the largest grocery store chains here in the United States.
We used to have one much closer, but it closed, so we only go once a week on Tuesday when they have a lot of their manager specials, which are the foods that are going out of date . They are marked down to almost half price, so we find some really good deals .

Today is "Military Day" at the local Kroger affiliate and they give vets, reserve, and active duty folks 10% off a lot of the stock, so we will be heading in to town for our bi-monthly shopping trip.

I'm making Martha Stewart's fried chicken: 24 hour brine and 24 hour seasoned buttermilk marinade. It's a good recipe.

I'm miffed that I paid for an "organic" chicken because the Perdues were too large, and the package said "With Giblets!" There ain't no giblets. Heck, there's not even the neck. Just a chicken with an empty cavity. I guess organic birds don't have organs. bastards. I couldn't find a way to leave an angry review on Walmart's site.

Anyway, I'll make a cream gravy with mashed potatoes and steamed asparagus...and a salad.

Every once in a while I'll have Brie with a baguette, fruit and candied nuts for dinner. Dates are a frequent choice...they're quite satisfying.

Tonight I had a salad, leftover fried chicken, and an ALDI boxed Shells in a Basil Sauce. I never buy that kind of stuff except on stupid impulse. It was pretty flavorless. Next time I'll just buy some fresh basil and make my own.

Ordered a frozen pizza with my Walmart order, added more good stuff to it, and that was our dinner today. We haven’t had pizza for a while, so it made a good choice, and was easy to make.
