I eat all low calorie meals, my total being about 1,500.
Planning to make some chicken tenders, sides of baked potato and spinach.
Two nights ago I made, for the first time in about 20 years, homemade beef stock from bones. I will never do that again! I will add veggies to it tonight, some peas, onion, celery, garlic, corn and a little tomato; maybe some leftover spinach for supper tomorrow.
That reminds me of bone marrow, did you ever eat that? I love it. It's fashionable now at high end restaurants as an appetizer. Way back when I made it, it was cheap, not so cheap now.
Oh yes Chrissy I love marrow and did even as a child when I would eat hardly anything! Marrow bones are not too expensive here. Now and then I buy thinner cut ones for the dog and then feel too guilty to braise the marrow for myself, since that's her treat.
They're pretty pricey here the last time I looked for being just bones basically! I don't see them too often either. I also loved them as a child and it was a favorite of my husbands also...my kids thought they were Yucky, although I've seen my adult son order it as an appetizer a few times.
Chicken burgers on the BBQ..
I had a homemade Hawaiian pizza with loads of pineapple, ham and Monterey Dry Jack cheese... who cares about calories!
I burned a lot for the past two days carrying items from this place to another in the opposite side of the city, so I really need to replenish my energy somehow.
Not sure what will come for supper this Sunday though.
Tonight (Sunday) for supper I made B/S chicken breasts on the BBQ.. I used my own frozen that I pre marinated before freezing.. I dry marinate my breasts before freezing and I put them on the BBQ frozen.......
A turnip casserole was the veggie..
It's Monday morning here and Lisa is working so I am in charge of the one meal a day we have, today I will cook a veggie bean chilli with rice, it will be big enough to roll over to Tuesday, it always tastes better the second day
For supper tonight (Monday) I am thinking about some veal steaks on the BBQ..
I have some of those frozen and might thaw 2 for supper..
A salad is always liked with a steak...............
Tonight it is mango curry with basmati rice, blackberry sorbet for dessert.
It's 11:30 pm here, and I'm about to have hot cakes for supper rather than leaving them wait for breakfast, LOL
Last night (Wednesday) I made chicken thighs skin and bone in..
In the oven in a mushroom sauce, herbs and spices, at 400f for one hour..
They came out absolutely delicious..
Breakfast: 3 egg omelette with 2 slices of turkey bacon for my wife...
Bowl of porridge with cottage cheese and sour cream for me..
Spicy taquitos. Still got 9 left. I'll call those breakfast. Yummy.
I just had Chicken Tenders coated in a Tempura Batter...nothing else..no veg or anything...and now I'm going to have some vanilla ice cream coated in Dark chocolate for dessert ...
Yesterday a cooked a pork shoulder in the crock pot with some peppers in spicy sauce. Just pulled it apart. Broccoli.
Pre dry marinated B/S chicken breast that I froze with the dry rub..
I put them on the BBQ frozen..
Fresh salad with my homemade dressing..
I pulled out the Christmas decorations last night and realized I had no lights, so I made a big pot of corn chowder, so I could focus on shopping for what i need, then decorating, today and over the weekend. I'm fighting a migraine, so I might not get the lights on the tree and mantle (actually my entertainment center, but I like to pretend it's a fireplace) today. I used Ree Drummond's corn chowder with chilies recipe, and it's found here. I didn't have R*tel or chilies, so I added some salsa verde, and picked up some R*tel today when I was out getting the lights and other decorations.
Tonight I had fish Pie.... Prawns, Chunks of Cod, and Salmon with spinach , in a white cream sauce and covered in mashed potato and baked in the oven
Then for being a good girl today at the hospital I also had a Bendicks dark chocolate Mint Fondant for afters...

Supper last night (Friday) was a tuna casserole with a ton of veggies in it...
I LOVE those one dish meals....
Wife and I went out for supper and had a fish fry. Fish, fries, broccoli, Mac and cheese and a roll. Topped it off with a coffee. No room for dessert.

I'm doing without supper tonight. I went out and had a hamburger for lunch with french fries. Afterwards I went to a shop that sells candies and coffees and perhaps thousands of other items, a store people like to browse in. I bought some peanut clusters and back home had several of them. Thus, the supperless evening. One must pay for his calorie sins as he does any other transgression. I'm already thinking of breakfast.
