We are taking the simple route for our Thanksgiving dinner. Chicken thighs baked atop a dish of cornbread stuffing, green beans, whole berry cranberry sauce, and sweet potato pie. My wife mentioned mashed potatoes so we might have those too. Plenty for the two of us and probably enough for a repeat tomorrow.

I hope everyone has a happy Thanksgiving and plenty of good food.

Supper on Thursday was B/S marinated chicken breasts on the BBQ...
I take B/S chicken breasts and dry marinate them before freezing them in individule freezer bags.. That way I can put them on the BBQ frozen..

A fresh salad was the veggie..

We had hamburger steaks covered with a big pile of sautéed onions along with leftover mashed potatoes and green beans. The last of the sweet potato pie for dessert.

I was in NY so I had Pizza from my favorite Pizza shop. I go there every time I go home. The owner used to sing, in Italian, to my son and I each time we went. He passed away just this last week and it really upset me but I will remember his kindness forever. He made everyone feel at home in his restaurant. Many waiters and small restaurant owners should have taken lessons from him.

For tonight (Monday) supper, I took out of the freezer a package of chicken thighs skin and bone on that I will bake in the oven in a sauce of some sort..

I am thinking of a couscous to go with the sauce..

A salad would go nicely with all that.. My homemade dressing..

Breakfast: French toast (for a change) served with maple syrup..

Lunch: As usual, a BIG HUG and KISS... We don't eat lunch at all unless we get up early..
