What Are We Eating For 2016?

    Reheated foods are definitely NOT my speciality ......ECH !!!!! Lousy supper last night.. ............ I reheated the Chicken casserole from Sunday....... NO GOOD !!!

    Temperature turned mild and NO wind, so a BBQ will be in order for supper tonight (Wednesday).......
    I have some pre marinated B/S chicken breasts, or some Veal rib steaks to BBQ..

    For the main veggie, a Turnip casserole should go well with a BBQ..
    Coleslaw as well..
    I have some HUGE mushrooms that will see the BBQ as well..

    For dessert, some thawed frozen fruit with sour cream ........

    Breakfast: 3 egg omelette with 2 slices of Turkey bacon for my Princess..
    3 scrambled eggs for me..
    Pot of Folgers.....

    We're Just the opposite Steve. Most of our meals are made planning to eat them for at least another day or two. Many times we freeze some for a later date.

    Yesterday we took the bones and eggshells from the freezer and made bone broth in the pressure cooker. Then added vegetables and made soup. We will have the same today.

    Same here Sheldon, I often roll a meal over for a couple of days or more, I think a casserole or a curry tastes better after a day or so.

    I am curious Sheldon, about the eggshells in the stock. What do they add? Thanks.

    According to Dr. Williams, eggshells add Hyaluronic Acid, Glucosamine, and Chondroitin.

    I am curious, too. What kind of bone? How many eggshells? An how exactly do you cook them?

    Any kind of bones, chicken, beef, pork, or fish. Raw or cooked. We keep a container in the freezer and add bones and eggshells as we have them. When we get enough to fill the cooker we make the broth. We use the pressure cooker but a slow cooker or stovetop is fine. Dr. Williams is the only recipe I've seen that includes eggshells.

    The broth can be drank as is, used in place of water for cooking beans or other things, or as a base for making soup.

    I guess what I want to know besides the health benefits of eggshells (thanks for that) is how does the shell appear in the soup? Does it break down or are you munching on crispy shell?

    Just to mention... liquid made from simmered bones of any kind was called stock, while the liquid from mostly simmered meat was called broth. Now, everyone calls stock "bone broth". :)

    Supper tonight (Thursday) was some small rib steaks on the BBQ..

    Steamed and smashed carrots and parsnips
    Coleslaw

    Frozen, thawed fruit with heavy cream..

    Breakfast: 3 egg omelette with 2 slices of Turkey bacon for my wife
    3 scrambled eggs with some grated cheese for me..

    Ruby, the bone and eggshells are strained out and you just keep the broth. I too have wondered about the difference between bone broth and stock.

    T.V. dinners today. I took a couple of dinners from the freezer that we made from our Christmas dinner, Chicken, dressing, mashed potatoes, gravy, and candied sweet potatoes. We'll probably open a can of cranberry sauce too.

    Yesterday (Friday) was food shopping day which means we got home at suppertime with nothing out for supper.. I took out of the freezer 2 B/S chicken breasts that I had dry marinated before freezing and put them on the BBQ frozen...

    I had some broccoli that I steamed and we ended up having a rather decent meal and FAST !!!!!

    Will have the T.V. dinners today. Yesterday I had to go to Home Depot in the big city so I called a cousin who lives there and we went to a restaurant and talked over old times. We had chicken & dumplings, pinto beans, and fried okra.

    Last night it was chicken sauteed w/ olive oil, garlic, a jar of drained roasted red peppers, salt and some Cajun seasoning.

    Tuna Casserole with a ton of veggies in the casserole.. Actually it turned out to be a veggie casserole with tuna..
