Today, I found a youtube video for Asian Smashed Cucumber salad, and it looked interesting, so I just tried making it. I made a smaller amount than she shows in the video since it will most likely just be me eating it, and I have some brown rice cooking to go along with the cucumber salad. I added a half of a small tomato to mine.
That dressing sounds like it would be good on cucumbers and tomatoes. I don't see the point in "smashing" the cucumbers, though. I'd just slice them and get on with my life.
Actually, the smashing of the cucumbers was fun, @Beth Gallagher . There is no reason they could not just be chopped or sliced, but the smashing does give the salad in interesting appearance , and was easy to do, much easier than dicing them into small chunks would have been. I had mine for breakfast this morning, and it was DELICIOUS ! The soy sauce adds an interesting flavor to the cucumber salad, and is not as vinegar-tasting as when I just put the dukes and onions in a vinegar marinade. The fresh, hot rice went just perfectly with the salad. I would post a picture; but I ate it all !
