Coconut Cookies

    I get emails from AllRecipes about twice a week. There's always something I'm saving to cook later. This morning's email had a recipe for Coconut Cookies. They looked too good to defer, and it's chilly out, so I just now made them.

    I followed the recipe, EXCEPT:

    -I toasted the coconut in a cast iron pan
    -I upped the vanilla to a full teaspoon
    -I added 1/4 tsp of coconut extract
    -I chilled the dough in the fridge for 20 minutes

    They're pretty good. I baked them too long. I'm a very poor judge of cookie doneness. They're not burnt, but they're crispy rather than chewy. But I'll eat them.
