I haven't cooked fish in a while, so I went looking for a recipe when I was ready to cook up the pollack fillets. It never occurred to me to make a lemon butter sauce ahead of time, and I like that there's enough not only to pour over the fish before you cook it, but also to top it with afterwards. It was absolutely delicious. I cooked the fillets on the bottom shelf of the oven, and left them in there for 30 minutes. I might actually leave them in about 5 minutes longer next time, but my oven is difficult sometimes, so if you try the recipe I'd start checking earlier, and then decide. Here's the recipe. I had fresh lemons from the neighbor on hand, so used one of those, and it really made a difference. The ones in the store are somewhat tasteless, especially compared to these huge juicy ones my neighbor has, so use fresh if you can.
Pollack is a fine tasting fish. I like pollack too. I get lazy and get the frozen ones and pop it in my little toaster oven whip up some mashed potatoes and dinner is ready. I haven't gotten some fresh fish for quite a while too.
