Never heard more preposterous info for cookies, so tried them! Equal to any others I've had, even my Mother's! 1 C Peanut Butter (I used 1/2 P-Nut Butter, 1/2 Cashew Butter) 1 Egg, beaten lightly 1 C Sugar (used 1/2 sugar, 1/2 Erythritol) Baked 350F 12 minutes
@Sheldon Scott They are so delicious! But I am disallowed peanut butter due to kidney deficiency, and so must go easy. Constraints are never fun. Frank

@Gloria Mitchell I find them a bit too sweet. Others might not. Reducing sugar content without replacing it with something non-sweet reduces the amount of dough as well as the workability of it. Flour would make them denser. Perhaps go 13-1/2 C sugar and 1/3 C flour, with 1/2 teaspoon baking powder to lighten them up. I love to experiment! Frank
I have been using almond flour to replace regular flour, or at least part of the regular flour, and I think that it might work for your cookie recipe also, @Frank Sanoica . It would add the extra substance that you get from flour, but not the carbs that white , bleached flour has, plus the almond flour/meal, adds extra protein instead of more carbs. Coconut flour is also a possibility, it is a lighter flour than the almond. I often use a combination of both of them in baking.
