What's for lunch?

Making a pot of black eyed peas with noodles and veggies for lunch. I have been watching the Sicilian videos on YouTube, and the food looks healthy and delicious.
Fresh fruit for dessert.

We enjoyed the pasta with black-eyed peas a lot yesterday, and so I soaked some dry ones overnight and have them in the slow cooker with carrots, onion, and kale and a little bit of ham for flavoring .
We have our main meal sometime in the early afternoon, so it is not exactly either lunch or dinner, but it is the main meal, and then we can have more later if we get hungry again, or just snack.

We very rarely eat lunch ,as we have a couple of vita Brit’s for breakfast with some sort of fruit/ and milk ,then have morning smoko about 10 ish …a sweet biscuit / cuppa coffee out of our fancy machine that grinds the beans / froths the milk so we are not looking for any food till at least 4-5 PM ( we are not late eaters ) but I know many who don’t have a nightly meal till around 8~ 9 pm

I'm having Vietnamese Noodle Soup (pho) from Friday's lunch. They always serve a huge bowl, so I get 2 meals out of it. I also ordered an extra egg roll To Go.

One of these days I gotta try making this myself. The broth base is sort of complicated and takes a long time to simmer to do it right. I'd do a large enough batch to can extra servings.

I used to like salmon patties when I was a kid, but either my tastes have changed or I've not found my childhood recipe.
I just use garlic powder, minced onion, Hi Ho crackers and and a egg. Pan fry in olive oil. unlike some I do not like the clump of soft bones, and I rid it of the black skin. Oh and its is great to make like tuna fish. Even better I think
