Low Carb: What Are We Eating?

    Yesterday (Monday) I had a tooth pulled..
    Yesterday and today I just can't eat much, and whatever I will eat must be soft..

    Tuesday supper I made something rather soft ..
    I made some fish in the fry pan but I didn't bread my fish, only my wife's pieces..
    I steamed some cauliflower till on the soft side..
    I had some yogurt for dessert and my wife had some frozen blueberries with cream..

    Breakfast was also soft.. I made a lot of scrambled eggs and it was OK..
    No coffee for me but for my wife some Folgers..

    Lunch.. a glass of apple juice for me.....

    Supper tonight (Wednesday) was a tuna casserole... actually I should call it a vegetable casserole with tuna as I had a ton of veggies in it including cheese and cream....
    Dessert was caramel yogurt with some S/F maple syrup...

    Breakfast was each a bowl of porridge...

    We went to Sam’s Club and we got a pack of the frozen salmon patties ; so I had one of those along with my large bowl of romaine/veggie salad for my main meal today.
    For breakfast, I had coffee and one of the almond meal flatbreads.
    I am really getting to like these ! They only have almond meal, flax, baking powder ,egg, and a spoonful of coconut oil, and instead of putting them in the microwave, I put then on the griddle and make a flatbread.
    Since it has an egg and the almond meal, it is very filling, and even Poodle has decided that it is an edible food. One flatbread has 10g of protein, 4g of fiber, and only 2 net carbs.

    tonight (Thursday) I made for supper a stir fry in the wok..
    B/S chicken breast marinated in a honey/garlic sauce.. Onions, garlic, broccoli, mushrooms, red pepper, and red pepper..
    chicken stock for the liquid.. bit of soy sauce as well..

    Tonight (Friday) I made a meat loaf .. BUT ... I made it in muffin tins giving small individual mini loaves each.. About 6 each ....
    coleslaw, salad....

    Breakfast:... the usual of 3 eggs each..

    We had chicken, asparagus and tomato slices with some cheddar cheese. This morning, I had one of the almond/egg flat beads, made with los of cinnamon, some Splenda, and a few raisins, and topped with a bit of cream cheese.

    Yesterday (Saturday) We went a Passover Seder at some friends house..
    Of course, the low carb meal went out the window as the food had carbs galore, but for only one meal, we can live with that..

    Today Sunday we are back home and for supper I will be making a BBQ..
    Chicken drums slightly breaded with herbs and spices..
    A salad
    Yogurt for dessert
    Pot of tea...

    Monday supper....
    Fish... fillets of Tilapia lightly breaded and fried in butter and oil...
    Steamed cauliflower
    S/F butterscotch pudding that I spiked served with real whipped cream...

    supper tonight (Tuesday) was chicken drums in the slow cooker with a BBQ sauce..
    Steamed and smashed carrots and parsnips with caraway seeds..
    yogurt with fruit...

    tonight for supper it will be ......... HOK .....

    Breakfast will be the usual, of 3 egg omelette and turkey bacon for my wife, and 3 scrambled eggs for me...

    Official...lost five whole pounds since 3-31.
    Taking it off sloow is such a pain, but will be worth it in the end:)

    THAT IS ULTRA FANTASTIC ...............
    Just think about it for one minute........... That's five pounds in the month of April and it isn't even over yet....
    C'mon...... That's just over a pound a week.....
    What more can you ask for ????
    if you lost it any faster, it wouldn't be good....
    FAST OFF FAST BACK ON .......................... SLOW OFF STAYS OFF..........
