I've eaten duck loads of times, I love it... it's as readily available as chicken, although much richer, so I can't eat it a lot ... and I love Duck eggs, so much more ''meaty'' than hens eggs. I get them from the farm down the lane!!

Duck is all dark meat, juicy, and tender when roasted in the oven......

if you cook a duck breast on the top of the stove in a frying pan, it should only take no more than 5 minutes or it will be very tough... Always add it to a cold pan with no fat...skin side down to start !!

I love it with plum and hosin sauce and thin Chinese pancakes

I don't really know why duck has never been a popular food here. Unless it's because you need a pond or lake to raise them. I know that duck hunters from many places come to our coastal areas to hunt wild ducks. I have seen ducks by the hundreds, maybe thousands, in the Lake Mattamuskeet Wildlife Reserve. The hunters are not allowed to shoot them there but hunting is allowed in other areas.

Well, that cold that we were warned about never came...
Yes it was a bit chilly but it was -28c and not half as bad as they predicted..

Does that mean we shouldn't rely on the weather network for accurate weather forecasts ???

Just got this notice from environment Canada ……………………...

    Issued at 14:40 Saturday 19 January 2019

A prolonged period of very cold wind chills is expected.

Wind chill values of minus 40 to minus 45 are occurring over much of Northern Ontario.

This bitterly cold Arctic airmass will remain in place through the weekend.

Conditions will begin to slowly moderate early next week.

    ###

Risks are greater for young children, older adults, people with chronic illnesses, people working or exercising outdoors, and those without proper shelter.

We are off for the day to Sudbury for a medical appointment for my wife.. Sudbury is about 125kms from our house... Nothing urgent, just a bone scan..
Now, they are calling for some snow today, all day.. Should the weather be really bad, we will be sleeping over in Sudbury rather than risk it coming home in the storm, however if the storm isn't that bad, we are coming home..
They are calling for 1 cm of snow per hour for the next 36 hours... 2 1/2 cms make one inch.. On the long run, that could be quite an accumulation..
I know I drive the perfect winter vehicle, but, safety first.. I will bring an overnight bag just in case..
Just to let you know that I could be gone for 2 days........................ MAYBE !!!!!

I may be gone for a while, too. My SIL who has terminal cancer was just in the hospital for several days. She came home today. She will need someone to stay with her. I may be that someone, at least part of the time. If I'm not here, I'll be helping her.

    For now, good-night, all.
