Sweet Potato Pie Ingredients: 2 cups mashed sweet potatoes (one 29-oz. can, drained) 3 eggs, beaten 1 cup evaporated milk 1 teaspoon ground cinnamon 1/2 teaspoon ground nutmeg 1/2 teaspoon ground ginger 1/4 teaspoon ground cloves 1/4 teaspoon salt 1 teaspoon lemon juice 1/2 cup sugar 1 cup packed brown sugar I teaspoon vanilla 1 9 inch pie crust Directions: Preheat oven to 350 degrees. In a medium bowl, mix ingredients and pour into pie crust. Bake at 350 degrees for 50-60 minutes, or until a toothpick inserted in the middle comes out clean. You may top it with whipped cream if desired
I have never had sweet potato pie. I always think of sweet potatoes as a side dish and an alternative to white potatoes health wise.
I love sweet potato pie. It is more of a Southern thing @Chrissy Page, it is very much like pumpkin pie but not quite as spicy. I prefer pumpkin pie, but sweet potato pie is quite delicious as well. I never tried to make it from scratch @Sheldon Scott, I usually leave the baking to Mrs. Smith... However, that recipe looks pretty easy. I might try it. I have made pies of of a whole pumpkin before, with mixed results I might add. The sweet potato pie looks much the same.
She cooks so much from scratch on Thanksgiving and so much I'm afraid she might make me bake it, lol.
We make baked sweet potato sometimes particularly when there are leftovers of sweet potato in the kitchen. But your recipe, @Sheldon Scott, looks interesting to me because it is a mix of spices that are fit for cooking a dish. Just my speculation that if you would add half a cup of ground meat, it could pose a challenge to the Spanish empanada which is a popular meat pie here. And as @K E Gordon hinted about pumpkin pie, yeah, it looks like a good recipe for pumpkin pie.
Corie, it's been my experience that just about any recipe for pumpkin can be used with sweet potatoes. This recipe is sweet so I'm doubtful it would be good with meat.
I had my first sweet potato pie from Walmart...even if the sugar was a bit too high, I bought the treat for us to enjoy because sweet potato is so healthy to eat! Your recipe seems simple enough, I love simple and I can substiture the sugar with Stevia, so it'll be healthier to eat. I always wait for sugar free or no sugar added pies. Fortunately there is no sugar added pumpkin pie at Foodland, Safeway has so far no sugar added apple pie too. I hope and wait for pastries with no sugar added or made with Splenda or Stevia too. This holiday season I'm hoping for more things no sugar added so I can just purchase it and cut up to eat, I love simple. I like both pumpkin and sweet potato pies too...here's hoping for, on sale of course, please...like 2 for $10 pies!
You seem so happy, @Krissttina Isobe about sugar free pie and I don't want to burst your bubble but even if it's sugar free....pie isn't that healthy. But once in a while in moderation there's no harm in it so enjoy and I hope it is 2 for $10 at Safeway! Food 4 less here has sugar free apple and peach pies but I've never bought any. They have some other sugar free desserts too in their bakery. I haven't looked at my Safeway for sugar free pies so don't know what it carries or how much it costs here.
*The Safeway sugar free pries I got is from Safeway $5 Fridays...were $5 each, great. We don't have Food 4 Less here on Oahu. I'll be careful about pies, for I'd like to stay healthy...thanks!
