Sweet Potato Cake

    Last night my wife got hungry for sweet potato cake, so I made one. It was good, as always.

    I have made sweet potato pie but I have never heard of sweet potato cake. Do you have a recipe to share?

    What we have here is sweet potato cake. When we vacationed in the northern province of Batanes last month, there was a restaurant in the most expensive hotel (that we visited but we were not booked there). In their menu was a sweet potato bread. I thought it was an ordinary bread but it turned out like muffin and my husband said it's actually cake.

    I am curious about that potato cake. I don't have the slightest idea how it tastes and how it is made.

    SWEET POTATO CAKE

    1 cup butter
    1 cup packed brown sugar
    1 cup white sugar
    4 eggs
    1 tablespoon vanilla extract
    1 1/2 cups self rising flour
    2 cups mashed sweet potatoes

    In a large bowl cream the butter and sugars until smooth. beat in the eggs and vanilla. Stir in the flour then the sweet potatoes.
    Pour into a greased 9x13 pan. Bake ate 375F for about 30 minutes.

    Note: This cake is so sweet and moist it doesn't need icing but I usually make a powdered sugar icing to top it.

    That sounds so tasty, Sheldon, and I like your note about the frosting ;).

    And, just in case anyone wants to make it, but only has all purpose flour (note this conversation is per cup)
    1. To make 1 cup of self rising flour:
      1. 1 cup of all purpose flour.
      2. 1 1/2 tsp baking powder.
      3. 1/2 tsp salt.
      4. mix well

    Sounds like a delicious cake, I never ate it before, so I might try it out!

    :oops:The recipe sounds very sweet. I like sweet potato and I usually bake them with the skins on for a sweet treat. I've heard of sweet potato pie and now sweet potato cake. I hope they have this in the stores some day soon. I haven't seen any yet in the stores I shop at. Thanks for the recipe!
