Soup For The Rainy Day

    It is now rainy season here so we are expecting the rains every day. This change of climate has been beneficial for my water bill since we seldom water the plants anymore. And the electric bill has gone down as well for the air conditioner is not much used.

    For the cold balmy weather, one of the best to eat is home soup. We call it such because of the original recipe. It is a mix of pork and chicken meat, sauteed in garlic and onions, and cooked in the broth of the pork and chicken. The pasta is either macaroni or elbow pasta. Served steaming hot, that can be our meal for the whole day. By the way, the best partner for home soup is buttered toast.

    My favorite is vegetable beef soup made with stew meat which I cut into smaller pieces, and a variety of vegetables, the more the better. We serve it with either crackers or cornbread.

    I'm a pea souper, with hunks of ham or pork in it. Or bean soup will work too. Love corn bread.

    Way too hot to even think about soup, let alone cooking it..
    Our favourite soup in winter up here is CHICKEN SOUP made the old fashion Jewish way..

    The topic of this thread is "Soup for The Rainy day".............

    First of all, I really wish it would rain....
    We haven't had any rain up here to speak of in the past 6 weeks, if not more..
    Everything is dry and we are under a "fire ban"... No open fires at all !!!

    Now, if it would rain for a few days non stop, I would make a pot of soup.....

    Amazon had the large #10 cans of dehydrated broccoli cheese soup on clearance, so I decided to order a can and see how we like it. Since you just add the soup mix to water and boil it for a few minutes, it should be a quick and easy addition to a sandwich, or just to have a hot mug of soup.
    You can also add other veggies, like onions and carrots if you are making a larger amount of it, but I think that we will mostly just be suing it for when we want a quick hot snack of soup.

    I haven't tried that brand, but I used to buy the Bear Creek brand of dried soups to carry in the RV. They were actually pretty good; I need to buy some for my "emergency stash."

    I tried the new cheddar broccoli soup, and it works really well. the first time, I tried just cooking the chopped broccoli along with the soup, and that did not turn out as good; so this time, I made the soup as directed and also steamed my broccoli in a separate pan, and then added the soup mixture over the top like a cheese sauce for the broccoli.
    I think that I might try adding some to my chicken boullion soup, too, and see how that tastes.

    I frequently make what my grandma called "refrigerator soup". Your vegetable drawer in the fridge is full of limp veggies? IT'S SOUP DAY!

    A few days ago, I found limp cabbage, limp kale, limp carrots, an onion past its prime in the fridge and also slightly-soft potatoes in the pantry. Chopped 'em up, put them on to boil and seasoned the soup with a package of beef stew mix and lots of pepper.

    I'm still eating on it.

    You can also can soups yourself if you are a canner, or can ingredients to be made into soup including beef, chicken, fish, or vegetable stock that can be used at a later date.
