Pork Or Chicken Marinade

    There are a ton of marinade recipes out there with these foundational ingredients, but the addition of nutmeg and thyme gives this one a very special flavor, so I thought I'd share it.

    I just happened upon it tonight when I was searching for grill times for some pork loin strips I defrosted. The instructions said it's also good for chicken. It went together in just a few minutes. The pork only marinated for an hour or so and was very, very good. The marinade left way less residue on my grill than a bottled BBQ sauce does.

    Grilled Pork Loin Strips With Marinade



    2 boneless pork loin chops (one per person on average), cut into 1/4" strips

    2 cloves minced garlic (1 tablespoon)
    1/2 teaspoon dried thyme
    1/2 teaspoon ground nutmeg
    1/8 teaspoon garlic powder (granulated garlic)
    1/8 teaspoon ground black pepper
    1/8 teaspoon dried ground ginger
    1/8 teaspoon cinnamon


    1/4 cup light Soy Sauce
    1/8 cup (2 TB) Extra Virgin Olive Oil
    1 tablespoon fresh lemon juice (juice of ½ lemon)
    1 tablespoon of honey

    Mix together the dry ingredients.
    Stir in the wet ingredients.

    Pour over pork in a Ziploc bag.
    Marinate for an hour or so (but not overnight or you’ll cook the meat.)

    Heat your grill pan or barbecue to medium heat.
    Lay the strips across (perpendicular to) the grill.
    Cook approximately 4 minutes on each side (145°-160°.)
