My low-carb wife has not eaten a potato or other starchy vegetable in several months now. Today, she crock-potted this meal for about 6 hours, a big chunk of boneless beef roast, and wait till you see the "potatoes"! They are radishes! Very low in carbs, acceptably so, I imagine, but the taste is absolutely amazing! There is NO radish-taste. They taste like potatoes, beyond a doubt! She used some seasonings, the type I am not aware of. Will find out if anyone is interested. A wonderful, protein-rich low-carb meal! Frank
Yes, I've used radishes instead of potatoes, think I posted a recipe on here for them somewhere. They become milder when they're cooked so a good substitute unlike some of the other veggies people use to replace potatoes, while mashed turnips will look like mashed potatoes the taste is stronger, same with cauliflower. Kudos to your wife...I see she really knows her low carb!
