Last night was fish.. fillets of salmon lightly breaded and pan fried..
Acorn squash which I cut in half, baked in the oven at 400f upside down for about 45 minutes, then scouped it out with some butter..
    Stewed peaches with heavy cream..
    Pot of tea....
After supper we like our pot of tea in the living room while we talk and enjoy the quiet time and just let the tea go down to aid in the meal's digestion..

I have fallen off track over the Christmas holiday. We had Lindor Chocolates.......yummy ! But anyway, today , working on getting back to better eating. Tonight’s dinner was a big taco salad with enchilada sauce on top.

Yvonne...…. I also had some Lindor chocolates.... Its all over.. No more...

supper tonight was a real winner.. B/S chicken thighs pan cooked in spiked stock.. They were simply delicious..
Steamed broccoli with the stock sauce on top.. Again delicious..
As for the stock, I used vegetable stock, Worchester sauce, garlic, and seasonings.. Put the liquid in a fry pan till it boils, lowered the heat, added the thighs, cooked on both sides, and served them with lots of the sauce...
Poured the sauce over the broccoli...

Looks like for tonight and a few other suppers, I will be making a vegetable soup in the slow cooker..
We always enjoy a good bowl of homemade veggie soup during the winter..

This will be the last time I post here on a regular basis my daily food....
I will keep on posting, but not as often, as somehow the interest has dropped form this site..
We had a good input for a while, but that was then, and now it is overly quiet.. Unless it picks up again, I will not post daily..... I will continue to monitor but not post my food..
I tried to help those that wanted low carb info, but that didn't work for long..

    HAPPY NEW YEAR TO ALL……...

    I actually cheat....
I use the tortilla wraps as a base and I use a canned pizza sauce..
Sliced fresh mushrooms, diced red onion, diced pepper, thin slice of tomato, and mozzarella cheese..
Vegetarian.. !!! I NEVER add pepperoni or any other meat.. sometimes sliced olives..
Bake in the oven at 430f on a cookie sheet till the top is slightly golden....

A friend went ice fishing and brought us some pike fillets..
Fresh fish is really much better than the frozen stuff you buy...
Each fillet was 14 inches long which one feeds the 2 of us...
