Low Carb: What Are We Eating?

    Its starting to gradually get hot here again.. That means BBQ's or salads for supper..
    They are calling for around 34c for next week and that is the temperature, not the humidex...
    too hot to cook and besides, I will be working out in the field with no time to cook... BBQ every night will be just fine...

    Chicken leg quarters, skin removed and fat removed.. Dry marinated and on the BBQ they went..
    Steamed carrots and parsnips, mashed with herbs and butter..
    S/.F vanilla pudding spiked with frozen blueberries..

    Tonight was homemade pizza...
    I took tortilla wraps, a can of pizza sauce, sliced mushrooms, diced red onion, diced sweet pepper and loads of mozzarella cheese..
    Cook in oven at 450f till done...

    B/S chicken breast in a honey/garlic sauce on the stove..
    Steamed carrots with peas..
    stewed peaches with heavy cream..

    Today Monday I made a meatloaf using minced chicken..
    I added lots of flavouring by using herbs and spices.. Tasted awesome.. Just a bit leftover which I will have with my eggs tomorrow for breakfast..
    Stewed peaches with S/F vanilla ice-cream.. Good summer treat..

    Today, July 1st is our wedding anniversary...… 23 glorious years...
    We can't go out for supper as it is way too hot outside and they only have patio tables outside, no inside seating..
    It will be about 42c as a humidex today which is too hot to eat out, besides the mosquitos will eat us up alive..
    I will try to cook us a lovely meal but so far, I have NO idea what to make...
    I was thinking of a stir fry using B/S chicken breast which I have lots of.. I also have all the veggies I need..
    No cake …..
    Perhaps something for dessert.... maybe...
    How about a cocktail first..... In a champagne glass, I will put some apple juice and we can make a toast on that...

    Thursday supper was fish.....……… fillets of Haddock, breaded and pan fried
    A Caesar salad went well withy the fish..
    Frozen fruit with Splenda and heavy cream..

    Today, Friday will be ……….………. HOK ….
    Its way too hot again to use the oven.. Maybe a BBQ but, there again,...…. maybe...

    Supper was chicken drums, dry marinated and on the BBQ..
    I also added each a banger as well as I thought there wasn't enough with 2 drums each..

    Supper tonight was a vegetable casserole with some tuna in it...
    I love those one dish meals.. simple to make and serve and clean-up..

    Today is another …. HOK..... day...…………….. I have NO idea what to make for supper..

    For breakfast I will be making pancakes.... My own homemade pancakes..
    I have several different recipes that I use but I don't know which one I will use today..
    I use wheat gluten as the flour and I add some fruit like mashed banana, blueberries or whatever I have..

    Pancakes were super delicious.. I coarsely mashed a banana in the mixture and they were awesome..

    Now, my supper was supposed to be B/S chicken thighs on the BBQ, but somehow I took out a wrong piece of meat which turned out to be 2 small pieces of sirloin that I had in the freezer for some time.. Well, I put them on the BBQ and I added a chicken burger just in case it wasn't any good but it was again very good.. The one burger we shared as the sirloins were small anyway..

    too hot to start cooking a decent meal... something easy and super fast...
    Fish again.. fillets of tilapia, breaded and pan fried..
    Steamed carrots and parsnips smashed with butter and chives..
