    Boy am I ever doing great so far this year.....
    Another day of .... HOK ..... !!!!!

    I think we are going food shopping today which means I will pick-up something for supper...... or.... we might grab supper out...

    We did NOT go food shopping today... Please don't ask why....
    The ... HOK ... turned out being B/S chicken thighs breaded and pan fried in EVOO...
    A salad that I made and my dressing..
    Stewed peaches with heavy cream..
    Pot of tea...

    I used some of the turkey and made fajitas with low carb tortillas. It was delicious !

    I'll sometimes make a wilted salad with lots of garlic and oil heated over the greens. Delicious.

    today for breakfast I will be trying something different................. pancakes.... BUT... made without flour...
    Mash 2 bananas, add 2 eggs, mix well, add mixture to pan with EVOO, ....... cook like usual pancakes....
    I will serve with S/F syrup......
    I have NO idea if it will turn out good or not, but I will give it a try....

    Another interesting breakfast that I have been wanting to try is “chaffles “.
    They are made by beating up eggs and shredded cheese and then cooking them in a waffle cooker. Some of the recipes that I have seen also say to make it with almond flour and eggs. I think that either way would be good, and I have been making the almond flour flatbread that I cook in a pan, and I like that.
    It is just almond flour, psyllium , baking powder, egg, and oil, and I also add a bit of flax and chia seeds.
    The exact recipe is on you tube. I will see if I can find it and post it here for all of us Low-carbers.

    Edit to add:
    Okay, I found the recipe for the almond flour bread . This is really versatile, and once you make up the mix, it is quick to make yourself some low-carb bread.
    The video suggests cooking it in the microwave, and I have done that; but I really like to cook it on the stove in a skillet and make a flatbread out of it that can be used for easy tacos or whatever.
    The recipe does not call for chia seeds, but I get both chia and almond from Amazon, and grind them fresh in the blender when I make this bread. If you can’t find almond flour or psyllium at your local grocery, everything here can be ordered from Amazon.

    I didn't make those banana pancakes as I said I would.. maybe tomorrow (Sunday)....
    I ended up making us each a bowl of cooked porridge..
    I made for supper some of my chicken burgers frozen and on the BBQ...
    A Caesar salad to go with it...

    Breakfast this morning was a total disaster.. I tried to make those pancakes using only bananas and eggs as the recipe said...
    Well if you like a banana omelette, it is just the thing.. It came out like something else I have never seen..
    We ate it by putting on some S/F syrup, but I will NEVER try that again...... No thanks !!!
    My pancakes I make are low carb, and are simply delicious.. I use wheat gluten flour to make them..
    I could add a mashed banana but they are still pancakes and not an omelette...
    I add some cinnamon, just a pinch of nutmeg, and some sweetener.. Vanilla extract also sometimes..

    Meatloaf made with minced chicken...
    coleslaw

    Frozen fillets of whatever it is.. Dead fish of course..
    A salad with my dressing..
    A dessert of some kind..

    Tonight was....... well,..... I took out of the freezer a package of chicken drums to thaw and put them on the BBQ...
    Don't ask but when they were thawed, I noticed they were chicken thighs and not drums... Oh well, I took off the skin and cut away as much of the fat as I could, dry marinated them and I put them on the BBQ.. They came out very good..
    Steamed broccoli..
    Frozen blueberries with cream..
    Pot of tea...

    We were in Sudbury for 2 days and just before I left Sudbury, I went to Wallmart to buy a BBQ chicken..
    Last night (Thursday) we had half the chicken.. Another meal remains but I don't think we will have it tonight because I don't like serving the same thing 2 days in a row.. Tomorrow (Saturday) will be the other half of the BBQ chicken..
    Last night I made a coleslaw to go with the chicken.. Next time it will be a salad...

    Now, for tonight I think fish would be a good idea.. I have all kinds of frozen fish but we seem to like salmon fillets the best..
    Salmon fillets lightly breaded and pan fried..
    Steamed cauliflower..
    Pudding that I will spike and serve with heavy cream..
    Pot of tea......... after a meal, a pot of tea goes well..

    Supper tonight.... I made my homemade pasta sauce using minced chicken.. I froze the balance of the sauce for another time..
    A spaghetti squash was the pasta....
    Dessert was frozen blueberries with cream..
    Pot of tea....

    supper tonight will be ............... HOK ....... again...

    I know it will NOT be a BBQ as it is very stormy and very windy out today...
