    I found a recipe for pizza meatloaf that sounds really good. It uses ground turkey but I'll use hamburger instead. I'll let y'all know how it turns out when I make it.

    Shirley....
    I only use minced chicken or minced turkey.... RARELY minced beef... NEVER PORK !!!!
    Sometimes minced moose as well..

    I know you don't eat pork but I thought beef was OK.

    Beef is OK but we are not the biggest red meat eater..
    Nothing wrong, but it just works out that way..
    We do eat beef but it isn't the main meat.. Chicken, turkey, moose, deer, fish and some veal..

    Please don't get me wrong...
    A good rib steak on the BBQ is almost impossible to beat, but we don't have it often..
    Once or twice a summer we indulge in that..
    A good Moose steak is also hard to beat when cooked properly..
    A beaver roast is a real treat as well..
    Venison is tender, flavourful and also a treat..
    A roast of black bear when properly done is a delicacy as well..

    So you see that we do eat some meat that isn't fowl, but we limit our choice on them...
    It also depends on when we are given those meats..

    One thing that works well for making ice cream for one or two:

    Mix up the ingredients, freeze in an ice cube tray, place cubes in a mini food processor, and add a small amount of heavy cream for low carb. The more heavy cream, the less icy the product.

    It makes a soft-serve ice cream or can be placed in serving bowls and placed in the freezer for a little longer.

    As far as pancakes goes, I saw somewhere where they mashed a few ripe bananas, added some egg, added some sweetener, add a bit of baking powder, and just made the pancakes that way..

    I have NEVER tried it but it does look like it might be something to try.......
    Personally, I like to use either almond flour or wheat gluten flour... Both are low carb...

    FLAXMEAL CINNAMON MUFFINS

    3 eggs
    1/4 cup of oil
    1/4 cup of a sugar free syrup..
    1T vanilla
    1/2 t baking soda
    1/2t baking powder
    2T cinnamon.. (the amount is correct)
    1 cup flax-meal flour
    I like to add some sweetener as I find them a bit bland.. Like 1/4 cup of splenda or sweetener of your choice..
    I use splenda brown sugar as the sweetener..

    In a bowl beat the eggs, add the syrup, oil, sweetener, and vanilla..
    In another bowl, combine remaining ingredients.. Stir the dry into the liquid and mix well..
    Let stand for about 5 minutes as it will thicken.. Spoon into greased muffin cups (without papers)
    Bake at 350f for 12 to 15 minutes (I go a bit more) or till they are lightly browned and seem set to the touch..
    Remove from tin at once to cooling rack..

    I like them warm with butter or cream cheese..
    They refrigerate very well..

    COCOA

    For the other recipe using cocoa...
    Instead of using cinnamon, add 2 Tablespoons of unsweetened cocoa powder..
    You might need extra sweetener with this one..
    Personally, I don't like it with cocoa and I prefer the cinnamon....
