    To answer as to why there are two spellings.....(actually there are around 6). :D

    Here is the internet best answer:
    In Hebrew, the language from which the Jewish festival originates, the word for Hanukkah is not easily transliterated into English. This accounts for why there are so many spelling variants. But, Hanukkah and Chanukah are the two versions that are most widely used and accepted.

    And also the word should have 8 letters just like the holiday lasts for 8 days..
    If you are starting with H.. you add 2k's making it Hanukkah
    Other way is Chanukah...
    Either way is correct....

    Only Jews would make even a festival name complicated.
    My palms still sweat if I accidentally get my meat and milk on the same shelf in the fridge. :D

    Bess... I fully appreciate what you are saying...

    Living up where I live, it is totally impossible to be 100% kosher unless you are a vegetarian...
    Certain laws and customs I follow but not the kosher meat..
    I don't eat pig or dairy with my meat, but as far as getting kosher meat up here, forget it..

    I do celebrate the holidays as best as I can..

    By the way,................... Is Bear meat considered a kosher meat ??? I often have some of that..
