Flaxseed Cookies

    1/2 cup butter softened
    1/2 cup brown sugar
    1 egg
    1/2 tsp vanilla
    1 cup all purpose flour
    3/4 cup quick cooking rolled oats
    2/3 cup ground flaxseed
    1 tsp baking soda

    Cream butter and sugar until light;
    beat in egg and vanilla.

    In separate bowl whisk together flour,
    oats, flaxseeds and baking soda; stir
    into butter mixture until soft dough forms.

    Drop by level tablespoonfuls, 2" apart on
    ungreased baking sheets. (I use parchment)
    Bake at 350 F for 12 minutes. Let cool on pan
    on rack for 2 minutes.

    We'll have to try those. My wife used to make flaxseed muffins but hasn't made them for several years.

    I like the muffins also Sheldon but don't have a recipe at the moment.

    Those sound yummy. I have flax seed flakes here, but no actual seeds I could grind. I guess I could substitute the flakes, or grind up some sesame seeds. I like that there aren't too many ingredients or steps, nice and easy.

    If you look in the section of your grocery were they keep the health foods, you should find Bob's Red Mill flax seeds.
    It is best to buy the whole seeds and grind them as you are going to use them , because they keep much fresher that way.
    I have an extra coffee grinder that I got from the thrift shop, and I use that just for grinding the flax seeds. that way I do not have to worry about flax seeds and coffee getting mixed in the grinder. One of those small food processers also works great for this, and even the blender, although it is harder to get the ground flax out of the bottom of the blender cup.
    When I put them in muffins, I just use a bran muffin recipe, and than add extra shredded carrots, raisins, and flax seeds. I usually use about 1/4 cup of the ground flax in my muffins.
