We'll have to try those. My wife used to make flaxseed muffins but hasn't made them for several years.
Those sound yummy. I have flax seed flakes here, but no actual seeds I could grind. I guess I could substitute the flakes, or grind up some sesame seeds. I like that there aren't too many ingredients or steps, nice and easy.
If you look in the section of your grocery were they keep the health foods, you should find Bob's Red Mill flax seeds. It is best to buy the whole seeds and grind them as you are going to use them , because they keep much fresher that way. I have an extra coffee grinder that I got from the thrift shop, and I use that just for grinding the flax seeds. that way I do not have to worry about flax seeds and coffee getting mixed in the grinder. One of those small food processers also works great for this, and even the blender, although it is harder to get the ground flax out of the bottom of the blender cup. When I put them in muffins, I just use a bran muffin recipe, and than add extra shredded carrots, raisins, and flax seeds. I usually use about 1/4 cup of the ground flax in my muffins.
