Egg Sale Recipies Wanted

    So, one of the markets near me had a big sign advertising and 18 count carton of eggs for 99 cents..Obviously, I had to take advantage of that..I will be making omelettes, frittatas, egg salad, deviled eggs and anything else I can think of, oh yes, Quiche...What are some of your favorite egg dishes?

    I would say I eat omelets the most but I love deviled eggs and egg salad. Plain old fried egg is good too.

    I haven't had a soft boiled egg in a very long time....don't know why either.

    A special treat for us is Eggs Benedict. English muffin, poached egg, ham and sauce.
    I'm lazy, so I use the McCormick packet Hollandaise Sauce Mix.
    Might be too rich for some, I make it with real butter.
    Also, a fried egg on top of a grilled burger paddy is one of my favorites.
    Hope you find some good recipes.

    When I can get a good sale on eggs, I stock up. I boil up a bunch and eat them plain for snacks, and also like to slice them on top of my salads. I go through phases when I'll eat an egg for breakfast every day, and sometimes I'll even just scramble some up for supper if I'm tired. One recipe I save for times when I have an abundance of eggs is flan, because it usually calls for about 5-8 eggs. I used to have a wonderful recipe for a Portuguese cake that required 8 eggs, but I've somehow misplaced it.

    I was looking through those, @Holly Saunders and one recipe called for 5 lions eggs...what are those?

    A year or so ago I found a recipe that was really super... before I had the chance to write it down they changed the ingredients, and the newer recipe was not nearly as good. So I often make the original, drawing from memory:

    4 large, well-beaten eggs
    1 can creamed corn
    3/4 cup vegetable oil
    1 t. garlic powder
    1 t. minced onion
    1/3 box Jiffy corn muffin mix

    Mix all ingredients together, and bake in 325-degree oven for 45 minutes.

    Sprinkle 1 cup shredded cheese (cheddar or your favorite) on top, and return to oven until it is completely melted.

    I can imagine someone going into a grocery store and asking if the store sells lion's eggs :p:p:p
