Beets

    We harvested the beet crop a couple of days ago. While I was having fun with the tree ( see post in diaries) my wife made pickled beets. She canned five quarts with a few beets left over which we ate for supper.

    I have never found a good use for beets.

    Beets are a great food for your liver and I love the greens they are as good as any spinach

    Beet greens are okay, but I have never cared for beets.

    When we thin the beets they barely have small roots started and we cook the whole thing, roots and greens, they are the best at that stage. We also grow Swiss chard which is related to beets but you only get the greens.
