Beet Cake

    BEET CAKE

    INGREDIENTS

    1 CUP BUTTER ( 2 STICKS )
    1 CUP PACKED BROWN SUGAR
    1 CUP WHITE SUGAR
    4 EGGS
    1 TABLESPOON VANILLA
    1 1/2 CUPS SELF RISING FLOUR
    1 1/2 CUPS BEET PUREE


    PREHEAT OVEN TO 350F

    IN LARGE BOWL CREAM TOGETHER BUTTER AND SUGARS, ADD EGGS AND VANILLA. STIR IN

    FLOUR THEN THE BEET PUREE. MIX WELL THEN SPREAD INTO GREASED 9X13 BAKING DISH.

    BAKE ABOUT 45 MINUTES.


    FROSTING

    iNGREDIENTS

    1/2 CUP BUTTER ( 1 STICK )
    I 8 OUNCE PACKAGE CREAM CHEESE
    1 TEASPOON VANILLA
    3 1/2 CUPS POWDERED SUGAR
    1/2 CUP BEET PUREE


    MIX UNTIL SMOOTH WITH ELECTRIC MIXER

    @Sheldon Scott, That’s a new recipe for me, and I doubt I’ve ever heard of it before. I have some small 2”x 4” loaf pans that I wonder if they would work for well for dinners for one or two people.

    I am curious as to what the bread/cake will taste like, I really do like beets, but this is beyond my imagination of what beets might taste like.

    Do you just steam the beets, peel them, and then run them just through a food prosessor? Does it taste like bread or more like a cake? Do you add an icesing like with cupcakes, ot is it better as just a bread? o_O

    I boil them until soft the run the through the food processor.

    It is a cake, Frosting recipe is included.

    The cake is red, the frosting is pink.

    Well it sounds good, @Sheldon Scott but I see it as taking something good for you and healthy (beets) to a fattening and unhealthy level....but you know that. :)

    Does sound good though...can you taste the beets? They have a pretty strong flavor to begin with in my opinion.

    Many years ago, maybe back in the '50s somebody came up with carrot cake.:rolleyes: It wasn't that great but it was really popular at the time. I've been making sweet potato cake for several years, which is much better than carrot cake. My beet cake is a gazillion times better IMNSHO.:p

    No, it doesn't taste like beets. Try it, you'll like it.

    I have all the ingredients on hand so I think I'll try it in the next day or so. The only thing is, the beets are canned. I haven't seen beets in the grocery store since last spring. I'm going to drain them first. Will that work?

    I dunno, but as long as they're not pickled beets I think they should work.

    The frosting was delicious. My granddaughter thought it was strawberry. The layer tasted OK but it was kinda heavy. If I make it again, I will try to do something so that it will be lighter. I wonder if I could use a yellow cake mix and just replace some of the water with the beets?

    I've never thought of cakes as "heavy" or "light". I do like a moist cake vs. a dry one. Experimenting with recipes is always good. Trying new things is what makes life interesting.
