Hi All When I was up the Gold Coast last year ,( July - August ) someone posted a simple but very nice recipe,for pancakes on another forum. They only consisted of banana and egg ,from memory ...Hubby and 1 We're talking about making some while bananas are really cheap ...$1.00 kg at moment.. I'm asking because I'm not really sure if they had sugar and any flour in them? We had them quite a bit while away ,then after we came home bananas were up to $12.00 kg due to cyclones destroying crops., couldn't afford them so I forgot the recipe .....They were so nice we had them with a small scoop of ice cream.. I have a feeling it MAY have been @Lara Moss ..???..I have looked on other forum and can't find them.
Hi Kate... Simply 2 eggs and a chopped banana mashed together..... the trick is to make them small, if you make them large they fall apart... Thank you Holly ,I will try them for breakfast tomorrow ,I bought 4 kg bananas today ..I put some of them in the freezer , will use them make smoothies ,and fruit ice cream while they are on special for $1 kg
Bananas are always cheap here Kate...fortunately we don't get cyclones... currently bananas are only 68p per kilo here.. and they're pretty much always approx that price..
Most of our bananas are grown in Queensland, They suffer cyclones as well as Northern Territory. As you'd imagine both states can be and are very humid in certain months of the year ...Darwin NT ..is about the same 32c all year round. I have been there..Darwin was completely destroyed by a cyclone in 1974 . Queensland weather is ideal the time of the year we go up there We generally don't have them, Sydney areas tends to get a freak storm / mini cyclone at this time of the year .We can get wild winds ,but they don't useally cause any destruction like a cyclone
We don't grow Bananas here for the general market because it's not hot enough, we get most of our Bananas from Africa and Latin America..
Our normal price for bananas is about $4 kg ,so I make it most of them when we can get them for $1. Kg ,they freeze really well and can be used frozen / thawed for yummy smoothies,as well as cakes,biscuits,ice cream,
First time I've ever heard of making pancakes this way. I cheat I buy the heartsmart bisquick or the packaged Hawaiian Sun variety pancake mixes. We seldom have pancakes but I sure like them. I prefer plain pancakes topped with lots of butter and some of my wife's fruit syrup. I like real maple syrup too though. I never heard of the banana and egg pancakes, Maybe I'll try them someday when I'm in an experimental mood.
My wife makes absolutely terrific blueberry pancakes from a pancake mix. She also likes the pancakes at Mickey D's (McDonald's).
I love pancakes too but the difference with the ones that the Op is talking about is that they use no flour at all...just mashed bananas and eggs..
And they are great!!! I had to try it today for the first time. Thanks for sharing. Heated the pan w/ coconut oil.. then added my mashed banana and the two eggs. Wonderful pancake.
