Low Carb: What Are We Eating?

    Supper today was my homemade pizzas..
    I took tortillas, spread some pizza sauce, added sliced mushrooms, diced red onion, julienne peppers, and loads of mozzarella cheese.. Baked at 450f till done and ……… enjoyed..

    I have NOT been posting my suppers lately as the temperature up here is totally out of control..
    Way too hot for up here.. We have NEVER seen this kind of heat for this long in history..
    I have been making light meals and we have been eating much less during the heat spell..
    Even though we have air-conditioning, we still have almost lost our desire to eat a larger meal..

    Actually we live up here to get away from the BIG city and the intolerable heat.. Don't ask !!!!
    I still prefer the winter to this awful heat..

    The heat has eased off a bit and now I can start cooking decent suppers again...
    Last night I made a meatloaf using minced chicken..
    A fresh salad with lettuce from our garden..
    Stewed peaches with heavy cream..

    Yesterday I tried a casserole for the first time in a while..... its been too hot to cook..
    I took all kinds of fresh veggies in a pot, added a can of tuna, some stock, some assorted cheeses, herbs and spices and we had a casserole... It was sooo good that there wasn't any leftovers..
    I love those one pot meals..

    Today its raining all day... A very dull day... How about some soul food …
    Meatloaf made with minced turkey should do it.. My frozen containers are 450g..
    I will make the meatloaf in a muffin tin giving small individual portions instead of a loaf.. Yield 12 portions..
    Butternut squash diced, steamed, and mashed with butter and chives..
    Vanilla S/F pudding spiked with a bit of peanut butter..

    That sounds like a perfect supper for a depressing day..

    Chicken drumsticks on the BBQ but I put them in a BBQing basket frame to cook instead of directly on the grill..
    I dry marinated them first for a few hours..
    Butternut squash baked in the oven and served with fresh parsley..
    Frozen blueberries served with heavy cream and let the blueberries freeze the cream making like a blueberry ice-cream..

    We went food shopping today and it was HOT and HUMID.. I got tired out pretty fast in this weather although everywhere has air conditioning including my car..
    After shopping, I gave in and we went to Wendy's for each a burger, Caesar salad and a diet coke which we had a coupon for..
    I know...………….. !!!!! However I was totally burnt out and was in NO way able to make supper at home...
    Not exactly the low carb meal, but ……...

    Sunday breakfast is usually pancakes in our house.. Actually I make flapjacks instead of pancakes..
    3 bananas mashed, 3 eggs, Splenda, I cup of milk (I use cream) and 1 cup of flour (I use wheat gluten flour which is low carb).. I also add baking powder and cinnamon and a hint of nutmeg.. Let sit for 5 minutes to rise.. If too thick, I add some water..
    Serve with S/F syrup..

    Today, Sunday, will most likely be fish for supper.. I like to serve fish about 3 times a week.. Different fish but the only fish I have at this moment is frozen fillets of different types.. No fresh, yet...
    I like to bread the fillets before pan frying.. It gives body and tons of flavour..

    With all the lettuce in our garden, a salad will go very well with the fish.. My own dressing of course..
    For dessert, I bought a honeydew melon which I will cut up each a wedge...……

    Well, I guess it will be fish again for tonight..... Tuesday...
    This time it will be salmon fillets, lightly breaded and pan fried..
    Butternut squash baked and mashed with butter and fresh parsley..
    I have a honeydew melon that we will each have a generous slice of, for dessert.. I hope its ready to eat..

    today we went to Sudbury and we ended up going to Walmart where I bought a BBQ chicken..
    I also bought a Caesar salad kit and we had that with some of the chicken..

    If you like cheesecake (who doesn’t ? ) add about 8 oz of cream cheese to the sugar free pudding, and you have a delightful cheesecake topping for your blueberries (or any fruit), or just to have by itself.
    What I do is put the milk and the cream cheese in the Ninja blender, and pulse it to mix in the cheese, and then blend it for about 10 seconds on low. Then, I turn off the blender, add the pudding mix, and pulse it again until the pudding mix is thoroughly mixed in and then put it into the container to chill.
    Bobby and I have really been enjoying this, and if you have one of those little popsickle making kits, you can also freeze these and have a nice cream sickle .
