I'm back and we had a good trip to see Annmarie's ankle specialist.. Good news about her condition.. Healed and she is now in physiotherapy to get the stiffness out..

Today is a relaxing day with very little to do.. I will be taking my wife out to practice her driving again so she can get back to driving the car by herself.. she hasn't driven in quite some time, so around the village for today.. Home to cook a really good supper and a dessert..

Supper was simply delicious.. I made exactly what I said I would except I used the wok instead of a skillet..
Holly, I just saw it. Sounds awful! Hope the smell is gone by now! I also have a strong sense of smell and I don't know how you coped with it
Chicken breast cubed, marinated for a few hours, pan fried seared, and then removed.. A ton of veggies cooked in the pan and some stock added and add back the chicken to complete cooking.. Herbs and spices.. When I say a ton of veggies, I will be adding sliced onions, garlic, sliced mushrooms, julienne red and yellow peppers, broccoli florets, sliced carrots that I had pre-steamed, and some green and yellow beans.. Vegetable stock spiked with Worchester sauce and soy sauce.. One Tbs. (or more) of flour (or cornstarch) to thicken up the liquid.. If the liquid gets too thick, I will add some apple juice to loosen.. All those veggies will make it look very colourful.. I used a wok as there is more room to toss.. This can be served over either rice or small pasta.. We don't eat rice, so I made pasta..... Dessert: A Blanc Mange that I will spike with some almond extract and serve with REAL whipped cream, sweetened.. I will put some frozen blueberries in the bottom of the individual bowls first before pouring in the pudding.. Serve with sprinkles on top..
