    I found some salmon filet pieces in the freezer, and steamed some broccoli and cauliflower together. We still had some leftovers from the other night when I made that loaded cauliflower casserole, and I mixed that in with tonight's veggies to give them some good sauce.
    Bobby made us some lemon butter to dip the salmon in like you would do with halibut or lobster. The whole thing was a delicious, low-carb meal, and certainly filled both of us up.
    I made some lemon-coconut low-carb cheesecake dessert yesterday, so we might even have a bit of that with whipped cream if we have room later.

    Crockpot chuck roast and gravy, mashed potatoes, broccolli crowns, and yellow summer squash. :)

    The new ceramic pan I nraved about earlier, tonight, I browned two beef patties, got rid of about 6 Tbs. of melted fat from them, using paper towel soak-up, then added about 2 Tbs. Olive Oil, No-Salt, Powdered Garlic, and Pepper. Cut up a large Zuch (I can't spell the whole word!), half a big onion, and fried those together until the veggies showed signs of slightly browning. Added skim milk, about 1/2 C. and allowed to simmer until veggies soft to my desired "chew" level. Simmered a bit more, to get rid of excess water, added 1/2 can low salt, low fat Cream of Mushroom Soup, simmered until I liked the consistency, then smothered with sharp Cheddar Cheese shreds.

    Last night I marinated some pork loin chops, then found in my vegetable bin one red potato, one baking potato, and one sweet potato, so I peeled and chunked all 3 of these and boiled them until they were tender then added a little butter to them...with some green beans added our meal was complete....and very tasty too. :)

    Grilled cheese sandwiches made with a slice each of cheddar, muenster and pepperjack cheeses. Home made sweet pickle and beet pickles too.
    I took blackberrys from the freezer to make cobbler today. Would like to make ice cream but will settle for store bought this time.

    Yesterday, we went to the Asian market down the street and I bought some more daikon radishes, as well as a package of those hot green chili peppers (not sure of the variety). Bobby found two nice porkchops for dinner, and I cut those in half and cooked them with mushrooms. Then I cut up one of the daikons and cooked that with some added fresh chili pepper, bell pepper, and a few carrots and peas for extra color and taste.
    When cooked, the daikon is somewhere between a potato and a turnip in taste, and I really like it. Since they are not inflammatory like a potato is, and they are also very low carb (but high in vitamins and minerals) it made a delicious dinner for us.
    Even Chipper enjoyed bites of the cooked daikon, as well as porkchop bites (naturally).

    Today it will be shrimp and crawfish stew with rice and potato salad. It's crawfish season here in Cajunland and there's always good eating during crawfish season. :)

    For Valentine's Day we are having Shrimp Scampi, tossed salad, rolls and for dessert Key Lime pie. :)

    Wow, nobody has eaten anything since Valentine's day.:rolleyes: Y'all must be losing weight.:D

    I made a pot of chili yesterday. My wife made peanut butter cookies.

    My appetite is back...Sunday we ate dinner out and I had sea bass and succotash. Last night daughter made ribs.

    She works today and has a pot roast going in the crock pot. She also made lentil soup yesterday.

    Tomorrow she is home so we will probably eat lunch out, so I'm not gonna have much for dinner.

    Before I started work this morning I put a half leg of lamb in the slow cooker, after first searing it in coconut oil, then adding a can of chopped tomatoes, some veg and half a bottle of Rose together with all my favourite herbs and spices including Cinnamon to give it that Greek taste. Some 8 hours later it looked and smelled delicious,...............I have just finished eating the first helping, it should last a few days, cooked on in different ways...

    Sounds yummy, Shirley...my appetite is returning for the second time....just getting a little better after being sick with the flu since Saturday....first time in many many years Ive been sick.
