What's For Supper?

    I've been eating sugar free popsicles, they cool me off on the inside and it actually helps. Also Lean cuisine, or healthy choice or whatever is on sale.

    I'll only use the microwave in this heat without AC.

    I would like chinese food tonight, but no money for that today. So something inexpensive for supper are breakfast totillas. Eggs, bacon, a little cheese, and freshly made totillas from the mexican grocery for $1.99.

    I like to do Mexican breakfast tortillas...I use a low carb tortilla though. Very filling and yummy.

    I made sort of a homemade pasta veggie dish. I was trying to make homemade pasta sauce, but since I didn't have any meat, I ended up throwing all veggies in it too, When I was done I had something that tasted very much like ratouille without the squash. It wasn't half bad, I might try it again sometime, when I have all the ingredients. I don't know that it is any cheaper than jarred pasta sauce, but it is healthier I am sure, without all of the extra salt and preservatives they put in jarred sauce.

    I forgot to eat supper last night. Wasn't hungry and got absorbed in a TV show, then fell asleep. Still not very hungry. Don't know if this is a good thing or not.:confused:

    I rarely forget to eat. I didn't feel well yesterday, as usual, after I work on the yard, so I didn't eat supper. Actually, I did eat, but it was the other half of my lunch, which I hadn't eaten since I wasn't feeling well. I can't wait until the weather cools off a little, at least, but thankfully the fire ants left me alone.

    I still haven't cooked the pasta or made the stuffed peppers. I am thinking i might cook up the ground beef with some vermicilli,, a can of rotel and some spices like a fideo, and stuff the peppers with that.

    Had chinese food tonight from Wok and Roll. I know it's a funny name. I had mongolian triple tonight and it wad so good. I ordered it spicy and it was kust the right amount.

    LAZY day today. Probably sandwiches and chips. If I feel like it. Did I mention it's a lazy day today?

    Agree on the 'lazy day'. Warming up some maple syrup from the fridge and going have me a waffle.
    Probably not good for me but...
    Waiting for the waffle 'light' to go out is very therapeutic.;)

    I have a hankering for some good mexican food. Not the quickie get it through the window kind. I am talking of refried beans made with lard, homemade flour tortillas, and yummy cheese enchiladas. Oh, and a tall glass of cold sweet ice rea.

    Let me share our dinner last night. It is our original recipe of grilled chicken leg. It's supposed to be drumsticks but there was a mistake... I was the one who bought the chicken. Anyway, the only ingredients are red tomatoes, all 6 of them crushed by hand, and some salt to taste. So simple, right? But the baking is not that simple for it takes 2 hours.     For some garnishing, you can add sliced potatoes and include in the baking when one side is already cooked.     Yesterday I made an unstuffed pepper casserole. Put three more meals of it in the freezer. That makes 6 meals in the freezer from this ears pepper crop besides the meal we had yesterday.

    Today I think my wife is cooking a pork roast in the pressure cooker. I'm sure there will be potatoes, onions, and carrots with it. I had to buy onions but we still have potatoes and carrots from the garden.

    That sounds yummy @Sheldon Scott. I wanted to make Shrimp and grits tonight, as I have both shrimp and grits. However, I don't have any chicken stock so that kind of kills that idea. I guess I will have it later on in the week. I think I will have hot dogs and fresh corn on the cob.. I'd like to grill outside, but I need propane. I think that will be a project for this coming weekend. I can't wait to make shrimp and grits though. I have wanted to make it for years, and rarity of rarities, I have both shrimp and grits..:)

    Had asiand food again tonight. I am hooked on a spict diah called Mongolian Triple. Lots of low carb veggies with shrimp, chicken, and beef thrown in.
