Low-carb Loaded Cauliflower Casserole

    This is the most delicious cauliflower that I have ever eaten, and it truly is almost like having a loaded baked potato; but minus all of the carbs ! !
    I saw the recipe posted on Facebook, shared and saved it, and then tonight, we had that for dinner (supper to @Sheldon Scott ), and it was delicious.
    I forgot to get the green onions; but I just followed the recipe as closely as I could, and we both loved it. I will definitely be making this again, and it is hard to imagine that something that tastes this good could also be diet food.

    I've been making this for years Yvonne.... except I use Broccoli instead, because like @Patsy Faye I cannot stand the taste of cauliflower...


    I have to say tho' in that recipe, there's an awful lot of cheese...I only use grated cheese, not soft cheese as well.. but it is delicious..

    I love almost all cruciferous veggies, cabbage, Brussels sprouts, as well as both broccoli and cauliflower. I think that the recipe would be great with broccoli, too, @Holly Saunders ; but the cauliflower is the right color to make it seem like a loaded baked potato .
    Since potatoes are not only high-carb, but very, very inflammatory foods, they are totally off of the food possibilities for me, except for rare occasions. This seems to be a great substitute for me, and is also diet-friendly.
    We are definitely going to have this more often, and I will probably try it with broccoli as well.

    We enjoyed the loaded cauliflower casserole so much that we are having that for dinner again tonight; but this time, I am using Brussels sprouts, which both Bobby and I really like. This is such a versatile recipe, and next time, I think that I will try broccoli and salmon maybe.
    The cheesy topping and sauce is just SO delicious, and the whole recipe is easy to make, which is awesome in itself. I used to have a veggie steamer; but I can't find it, and I am going to look for another one when I go to the thrift store tomorrow. Since we are making these recipes that use the steamed veggies, it will be a great way to let them steam while I am putting together the rest of the ingredients.

    I like cauliflower and this does look good enough to eat :)

    It is a pound and a half of cheese for 8 servings so I would think for special occasion or company's coming.

    And those Lambs, how cute is that....wonderful to bring to a potluck :)

    Actually, the first time I made it, I didn't have all of the cheeses; so I made it with less cheese and more cream, and used half and half because I didn't have heavy cream either. The sauce was still cheesy, but was thinner than the last one turned out. We actually like the thinner sauce better than the one with so much cheese. So, I think that just adding the right ingredients, and adjusting the amounts will work fine with this meal.
    It turned out fine with the Brussels sprouts, too; although I liked the cauliflower better.
