Sweet Potatoes

    Sweet potatoes are an excellent source of vitamin A (in the form of beta-carotene). They are also a very good source of vitamin C, manganese, copper, pantothenic acid and vitamin B6. Additionally, they are a good source of potassium, dietary fiber, niacin, vitamin B1, vitamin B2 and phosphorus.

    And they are totally delicious baked with a dollop of butter on top and sprinkled with salt.

    Nope...but will eat baked sweet potato fries...and ketsup;)

    I eat sweet potatoes ...I don't eat white potatoes though.

    I like both sweet potatoes and white potatoes; but I very seldom eat while potatoes either because I know how inflammatory they are. So usually, if we have potatoes at all, we have sweet potatoes. I have never had sweet potato fries, and I am not sure if I would even like them since my concept of a french fry is one made from a plain white potato. When you buy those, they are made from processed potatoes, and not even from real strips of potato anymore, and they just do not have that great taste of the fries I remember having when I was a teenager.

    True...but that is close to a sweet potato
    I intend to get. I have tried to like them other wise...but just don't like.

    I like sweet potatoes any way they are cooked. Baked with lots of butter, deep fried with cinnamon and sugar. sweet potato pie, sweet potato cake, candied sweet potatoes with marshmallows on top, etc. We still have a lot both canned and frozen from our garden.

    I also like white potatoes and have plenty of them too. We had a good crop this year

    I leave off the salt so make that two dollops of butter for me.

    Sure can tell that some of you aren't diabetic's by what you put on sweet potatoes. There are 6 grams of sugar in 1 cup of sweet potatoes. Add marshmallows and watch the old bg number go sky high.

    But, we will bake one sweet potato and split in half for each of us. Add some butter and yes........YUMMMMMM!

    The thing I enjoy most about sweet potatoes, is besides being so good for you...I don't find I have to add anything to the ones I bake. They are sweet and tasty without having to add any seasoning or condiment to them. :)

    I only like sweet potatoes as a savory meal...won't eat it if it's pie or anything with marshmallows...yuck!

    For Holiday meals (Thanksgiving and Christmas) we usually do some fancy sweet potato casseroles with pecans, brown sugar, marshmallows, etc. I often find that to sweet. One year I found a recipe for a sweet potato casserole with pineapple, pecans, and coconut (I have the recipe somewhere) which I found delicious and more like a dessert and which is the only fancy holiday dish I will make with sweet potatoes now. :)
